Hi there.

When it comes to sewing projects I am sure I must be the queen of the “to-do” lists....I swear my list is so long there are things on there since granny was picking cotton and stitching by candlelight! However, this last week I have crossed a couple of things off the list.

**(Don't forget about the UFO class scheduled for Saturday 27th April!) - https://www.anniesquilts.co.nz/cms/classes.html

My French General Quilt featuring Marie-Antoinette in the centre is finally finished and on the wall in the shop having been very beautifully quilted by Ali B. We have kits, patterns and centre medallion panels available for this on the website if you care to take a peak. If you are into ‘vintage’ this is a must have!

Also just finished are these Christmas stitcheries from The Birdhouse. These are two of the very popular pre-printed collection that Natalie has designed...and she still manages to come up with a new one each year. These are just $29.90 and they all come with a hard copy of the design as well so you can make one each for all your friends. There you go, if you start now, Christmas will be sorted!

I mentioned last week about some of the classes coming up – machine quilting with Bev Dyke, the tuffet foot stool and also our retreat in Akaroa. These are filling up fast so don’t leave it too late to let us know if you are keen to join us. More details on the class page of the website or you are always welcome to phone us at the shop 03 3076 277.

Now...on to the recipe. This is a good one if you are still dealing with an abundance of zucchini.

Creamy Zucchini and Chicken Pasta

  • 375 g spaghetti
  • 2 cloves garlic
  • 350 gm chicken breast
  • 6 small zucchini
  • Finely grated rind of a lemon
  • 3 spring onions
  • 2 tablespoons Parmesan cheese
  • ¼ light sour cream

Slice the chicken into thin slices and cook in a large fry pan with a little oil and the crushed garlic until lightly browned. Grate the zucchini or make zucchini noodles and add to the pan.

Cook the pasta, drain and then add this to the chicken while you prepare the sauce.

Combine the lemon rind, onions, sour cream and fresh herbs (optional). Gently stir this through the pasta. Season to taste and serve with an extra sprinkle of Parmesan and some fresh crusty bread.

Happy stitching

Rachel
