Zucchini and Sweetcorn Fritters
- 1 310gm tinned of cream style sweetcorn
- 2-3 zucchini grated
- 1 small onion grated
- ¾ c self raising flour
- ¼ c milk
- 2 tbsp grated parmesan cheese (optional)
- 2 eggs separated
- salt and pepper
- tsp sweet chilli sauce
- oil for cooking
In a bowl mix all the ingredients except the egg whites. In a separate bowl beat the egg whites until still and then fold these into the zucchini mixture.
Heat a frypan and cook spoonfuls of the mixture until browned on each side. Serve with sweet chilli sauce, crispy salad and some crispy bacon.
