Sue’s Black Vinegar Braised Beef
Place a 1 kg piece of beef in the crock pot for approx six hours with the following ingredients:
- 1 c Chinese Rice wine
- ½ c Chinese Black vinegar
- ¼ c brown sugar
- 1 c oyster sauce
- 4 cloves of crushed garlic
- 1 ½ c water and 3 whole star anise
Remove the meat from the liquid and either slice or shred it. Strain the cooking liquid and reduce down and serve with the meat along with steamed Asian greens and rice.
Crustless Corn Quiche (or Corn Pie as it is known in my house!)
- 1 large onion
- 2 cloves of garlic (optional)
- 2-4 potatoes cooked and cubed (you can use microwave baked potatoes or left over
- mashed potatoes works well too)
- ½ c milk
- ½ tsp salt
- 3 eggs
- ½ c flour
- 1 tsp baking powder
- ¼ c liquid from the can
- 1 440gm tin of whole kernel corn
- 1 c grated cheese
Fry the chopped onion and garlic (I also like to add in some chopped bacon too). Mix the milk, eggs, liquid from the can, salt, flour and b powder in a bowl until blended. Add in all the rest of the ingredients and pour into a solid bottom dish and cook for 20-30 mins at 210C or until set in the middle.
