Quinoa Fruit Cookies

  • 1 c rolled oats
  • 1 c wholemeal flour
  • 1/2 c brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 c uncooked quinoa
  • 1/2 c desiccated coconut
  • 1 cup sultanas
  • 2/3 c chopped dates
  • 1/4 c chopped dried apricots
  • 1 tsp baking soda
  • 180 g melted butter
  • 3 tbsp golden syrup
  • 1 tsp vanilla

In a large bowl combine the dry ingredients, spices, quinoa and dried fruit. In another bowl dissolve the baking soda in 2 tbsp of hot water and whisk together with the melted butter, golden syrup and vanilla. Pour this into the dry ingredients and mix well to combine.
Place heaped tablespoons of the mixture onto oven trays allowing room for spreading and bake at 180C for 10-15 mins or until golden. Makes 35-40.

Roasted Kumara and Quinoa Salad with Marinated Feta

  • 2 med kumara cubed
  • 2 tsp cumin seeds
  • 2 tbsp olive oil
  • 1 tsp ground coriander
  • 1 tsp cinnamon
  • 1/2 tsp turmeric
  • 1/3 c pistachio
  • 1 c quinoa
  • 1 orange juice and zest
  • 1 red onion
  • 1 c fresh mint leaves
  • 1 c coriander leaves
  • 100g marinated feta

Roast the kumara and cumin seeds in the oil. Put the quinoa in a saucepan with 2 c of water and bring to the boil. Cook for 15 mins until tender and the liquid is absorbed. Cool and then combine with all the other ingredients.
